Fat-Substitute Research Featured on Science Web Site

Roberta Claro Da Silva, Ph.D.

Roberta Claro Da Silva’s work to find a replacement for the conventional fats associated with cardiovascular and inflammatory diseases is featured in Science Daily, a web site showcasing top science news stories from leading research universities.

Da Silva is researching oleogel as a potential fat substitute for use in food processing..

Despite the recommendation to consume predominantly unsaturated fats, the way many alternatives behave at room temperature makes them unsuited for industrial applications, Silva said. Oleogel is a relatively new technology that can be applied as a total or partial replacement for conventional fats..

“The development of this technology both helps the consumer and meets industry demands to improve the healthiness of processed food,” she said.

Shirley Hymon–Parker, Ph.D., CAES associate dean for research, retired July 1. Hymon–Parker was a leader and trail blazer in the fields of human sciences and agricultural sciences for more than 30 years. As the associate dean for research in charge of the agricultural research program, she established our Undergraduate Research Scholars Program and has provided oversight for more than $30 million/year in sponsored research.  She also provided leadership in implementing the 125th anniversary celebration to commemorate the establishment of the 1890 land-grant institutions.
